First  courses

It's  unnecessary  to  talk  about  the  big  amount  of  different  italian  pasta's  shapes . First  of  all  our  pasta  has  to  be  made  of  durum  wheat  and  has  to  be  cooked  "al  dente" ,don't  overcook  it !!     Fun  is  that  every  kind  of  pasta  has  its  own  sauce ! For  example : - arrabbiata  sauce  only  with  "penne" - pesto  sauce  with "trenette" - amatriciana  sauce  with  "bucatini"   and  so  on .     We  love  pasta ; it's  an  excellent  main  dish  just  followed  by  a  simple  green  salade  or  boiled  vegetable .     Talking  about  "mediterranean  diet"  it's  a  good  habit  don't  eat  pasta  and  meat  in  the  same  meal . The  Campana  family  is  used  to  eat  this  way  since  a  lot  of  years .

SPAGHETTI  ALLA  PUTTANESCA

Ingredients  for  4  people 1 pound  (450 gr) spaghetti 1/2  pound  (250 gr) fresh  or  canned  tomato  puree 3  anchovy  fillet  or  2  tsp  anchovy  paste 5  oz.  (150 gr)  stoneless  black  olives 1  chopped  garlic  clove 1  TBS  chopped  parsley A  pinch  of  hot  pepper 5  TBS  extra  vergine  oil Salt  to  taste  (I  don't  use  it  because  anchovies  and  olives  are  pretty  salted)

We  absolutely  LOVE  this  sauce ! It  comes  surely  from  South  of  Italy  but  we  don't  know  exactly  from  which  region .      Let  saute  in  a  skillet  over  low  heat  oil , garlic  and  anchovies  for  just  a  few  seconds . Add  tomato  puree , hot  pepper  and  a  salt  pinch . Let  cook  over  pretty  high  heat  until  thick . Add  coarsely  chopped  olives  and  parsley .      Cook  spaghetti  al  dente  following  the  package  instructions . Drain  them  and  put  in  a  bowl  seasoning  with  the  sauce .

BUCATINI  ALL'  AMATRICIANA

Ingredients  for  4  people 1  pound  (450 gr)  bucatini 4  oz. (120 gr)  cubed  pancetta   5  TBS  extra  vergine  oil 1  tsp  tomato  paste 4  canned  italian  tomatoes , drained  and  coarsely     chopped   A  hot  pepper  pinch 1  TBS  red  vinegar Salt  to  taste 3  TBS  grated  Pecorino  cheese

Amatrice  is  an  old  small  village  on  the  border  between  Lazio  and  Abruzzo  very  famous  for  Pecorino  cheese  and  for  the .... bucatini  sauce .     Let  saute  in  a  skillet  oil  and  pancetta  over  moderate  heat  for  a  very  few  minutes . Sprinkle  with  vinegar  and  let  evaporate  for  a  few  seconds . Add  tomato  paste ,  diced  tomatoes  and  the  hot  pepper  pinch . Let  cook  for  a  few  minutes  until  thick .          Cook  bucatini  al  dente  following  the  package  instructions . Drain  them  and  put  in  a  bowl  seasoning  with  the  sauce  and  the  Pecorino  cheese .      It's  a  simple  and  tasty  recipe ; I'm  used  to  cook  it  when  I  have  no  time  but  I'm ... hungry !  If  you  don't  find  Bucatini  you  can  use  also  Penne .
