This
special recipe comes from the
family of Claudia's brother-in- law (Naples).
Claudia normally doesn't like to
knead any kind of dough but for
these pizzas she makes an exception ,
it's worth it !!! Everybody loves fried pizzas ; our american friend
Gene says he could become rich with
the fried pizzas business !
Prepare sauce before . Put all
ingredients in a skillet and let
cook the tomato sauce just for
a few minutes (10 - 15) over pretty high
heat . Remove garlic and let the sauce
aside .
Put flour , yeast , boiled potatoes ,
salt , sugar and oil in a food
processor and mix just for a
few seconds adding water until
the dough is like a pretty
hard ball . Continue to knead this dough
on a wooden board just for a minute
to have a soft dough (you
can add some flour if required) . Probably
you can use also a self - raising
flour but I never tried it .
Roll the dough out with a rolling-pin
on a floured board to have
just about 3 mm. thickness (0.1 inch). Be
patient because the dough is pretty
elastic !
Cut the dough into
rectangular pieces of 2.5 X 5 inches (6 X 12 cm).
You will have about 15 pieces , stretch them just a bit with
your hands and throw them in
the frying oil (180 °C - 350 F), they swell
immediately . Let fry until light golden
brown on each side , it takes
just a few seconds . Put pizzas on
absorbing paper in a large dish .
Warm a bit the tomato sauce
and put it (1 TBS) over each pizza ,
sprinkle with the grated Parmigiano cheese and decorate with
two basil leaves .

Using the instant yeast or the
self raising flour all the procedure
takes just half an hour .
