this dessert !

Peel chestnuts and boil them for
half an hour . Drain and take away the
second thin peel and put in a saucepan
with milk , 2 TBS sugar and the vanilla
extract . Let cook on moderate heat until
milk is absorbed . Sieve the mixture and put
again in the saucepan with the remaining
sugar , Rum and cocoa powder . Let cook on
moderate heat stirring with a wooden
spoon until mushy and thick. Let cool the mixture
and sieve it on a suitable dish
forming a mound .

This recipe dates back to late 1500 . It was born from the imagination of Brother Pasquale de Baylon (1540 - 1592) of the Third Franciscan Order , Parish Priest of St. Thomas Church in Torino . At the beginning the name of this egg - flip was "San Bajon" , in piedmontese dialect , then later was Italicized into Zabajone or Zabaglione . Pasquale de Baylon was sanctified by Pope Alexander VIII in 1680 and since 1722 is the Saint Protector of the Cooks , celebrated on May 17. |

Put yolks and sugar
in a small saucepan . Beat well with a
whisk until soft . Add the Marsala and put
the saucepan in boiling water (bain -
marie) and continue to whisk until the
mixture gets swollen and soft . It takes
only few minutes . Don't let boil !
