FONDUTA

Ingredients for 4 people

Put sliced squeezed Fontina cheese
in a high and narrow pot . Cover with the
milk and let soak for at least three
hours (I let it overnight). Drain the cheese
(not too much) and put it with butter
and yolks in a small saucepan . Put
the saucepan in boiling water (bain - marie) and
stir with a whisk . Don't worry if the
cheese clots ! Continue to stir gently for
at least 10 minutes until cream is
thick and homogeneous . Don't overcook !

PEPERONI PADELLATI

Ingredients for 4 people
|
|
Cut cleaned peppers in square pieces (1
inch X 1 inch) and saute them in a
skillet with oil over moderate heat for
about ten minutes stirring frequently (peppers
have to be tender but not mushy).

TERRINA MONFERRINA
|
Ingredients for 4 people
|
Saute the sliced onion
in a skillet with oil , butter and chopped
herbs for 5 minutes over moderate heat . Add
diced tomatoes , a salt pinch , sugar and red
vinegar . Let cook for half an hour
over moderate heat , stirring from time to
time .

INSALATA DI CARNE CRUDA

Ingredients for
4 people
|
Season the meat with oil ,
garlic and the yolk . Salt and pepper to
taste . Add lemon juice only when you serve
. Serve the meat salad in a flat
dish.
