Ingredients for 4 people

Beat with a whisk the yolks with the lemon juice , the grated peel , the flour and the herbs . Put the mixture in a little saucepan over very low heat . Continue to whisk for about two minutes until thick . Blend this mixture with the arrosto sauce and put it on the sliced meat . Serve hot . |

Ingredients for 4 people

This is a family recipe , very
quick and easy . Using a very sharp knife ,
carefully slice each chicken breast to have
eight thin slices . Place between layers of
plastic wrap and pound with the flat
side of a cleaver to flatten slightly . Dust
lightly with flour shaking off the excess .
Heat the butter in a large skillet
over moderate heat , and brown the chicken
to a light golden color , 3 or 4
slices at a time . Do not overcook . Put the chicken
on a dish and let
aside .

Put hazel - nuts , flour , butter and wine in a mixer and add this mixture to the arrosto sauce . Let cook for a few minutes stirring well and put this sauce on the sliced meat . Serve hot . |

can prepare vegetables a day in
advance . Put abundant water in a saucepan
with the coarse salt and red vinegar
. Bring to boil . Pour in diced vegetables
and let boil for 15 minutes . Drain
them well and put in a large
skillet with oil , sugar and mashed
tomatoes . Let cook covered over very
moderate heat for at least half an
hour until sauce is pretty thick .
