Ingredients for 4 people

Cut peppers in rectangular pieces (about
1 X 2 inches) and saute them in a skillet
with oil and garlic over high heat for
about five minutes stirring frequently .

Peel and clean the onions
cutting the summit . Dip them in boiling
water for 10 minutes . Drain them . Take
off the internal part to obtain
little bowls (see the photo). Sprinkle some salt
on each onion .

TERRINA DI CARCIOFI AL FORNO

Ingredients for
4 people
|
Clean and slice the
artichokes . Heat butter and 2 TBS oil
in a large skillet over moderate heat
and cook sliced artichokes until tender .
Beat lightly the eggs in a bowl with
Parmigiano cheese and the nutmeg pinch . Salt
and pepper to taste .

Ingredients for 5 people
|
|
Peel potatoes and cut the
summit . Hollow them with a coffee - spoon to
obtain little kegs (see the photo). Boil them
in salted water . Be careful , don't overcook ! Maybe
is better to use a Pressure - cooker .
