I'm sorry! I gave you
some wrong directions ! I cooked the croquettes
just yesterday (oops! only two of them
were left over ! We took the picture
all the same!).and I have to modify
the recipe. Peel egg - plants and put them
sliced in a large non-stick frying-pan
with the milk. Let them cook covered
on moderate heat stirring frequently until
they are soft. Let them DRY at
the most ! Put them in a
mixer with parsley , basil , garlic , breadcrumbs , Parmigiano
and eggs . Mix well adding nutmeg , salt
and pepper . Add some more breadcrumbs if
required .

Ingredients for 4 people

Wash potatoes carefully and boil them with peel . Let cool and peel them . Cut them into big pieces . Let sauté sliced bacon , butter and onion in a large covered skillet over low heat until onion is soft , light golden brown . Add finely chopped rosemary leaves and potatoes . Let cook until seasoning is absorberd . Add capers , stir carefully and let cook for two minutes more . Serve hot . |

spinach in a skillet with 2 oz.
butter and let saute for a few
minutes over moderate heat, until dry . Salt
and pepper to taste and set aside .

|
Peel
potatoes and cut them into pretty
thick slices . Put them in a large
skillet with 2 oz. butter , the milk ,
salt and nutmeg . Let cook half covered
over moderate heat until milk is
absorbed . Don't overcook . It takes about half
an hour .
